Here in Southern Utah, there are a handful of places that feel like they're actually part of the city's DNA. Paula's Mexican Food up on the hill is definitely one of them. For more than five decades now, locals have walked through the doors at Paula's for comforting plates of homemade Mexican food, warm conversations, and the feeling that they're eating somewhere totally special. That welcoming spirit began with the woman whose name is on the sign out front: Paula. This week, Paula Dominguez passed away at home, and the community of St. George is remembering her life, and all the memories made at her restaurant. She was 91.

From Humble Beginnings: Paula's Journey

Paula's story is one of true determination, family, and building something meaningful from the ground up. Born October 5, 1934 in La Feria, Texas, Paula grew up working alongside her family as migrant farm workers, following the crops throughout most of South Texas. In 1957, she married her husband Conrado Dominguez, in the same tiny little town where they both grew up. Years later, in 1963, the young family packed up and moved to St. George; a decision that would quietly shape the local food scene for generations!

Roots in Southern Utah: Building a Food Community

Paula worked a variety of jobs after arriving in Southern Utah, like sewing tents, cleaning homes, plucking turkeys, waiting tables at Dick's Cafe, and cooking at Desert Kitchen. It was there that Paula's homemade cooking quickly caught attention! Desert Kitchen began featuring her dishes as a weekly special, and customers could not get enough! The moment was building, and eventually Paula and Conrad opened Paula's Mexican Food in November of 1974!

Flavorful Rise: The Birth of Paula's Mexican Food

Now, more than 50 years later, the restaurant remains a beloved staple, still run by family and still serving the flavors and dishes that Paula made famous! Outside of the restaurant, Paula enjoyed crocheting, traveling with friends, and seeing the countryside with Conrad on his motorcycle. She also served the community through the St. George Lions Club and the St. George Elks Club!

Paula leaves behind children, grandchildren, and great-grandchildren, along with this lasting legacy that continues to bring the St. George community together around the table!
