The Humble Chicken Has Become a Force in Fast Food
Chicken strips are not the dry crunchy offerings served as an afterthought in trendy restaurants. Those who do them right pay attention to the breading and cook them in a way that leaves the chicken inside tender and juicy.
Like many in Southern Utah, I have driven past the Ernie’s Too gas stations and heard the advertising about their quality chicken strips. Recently, when I was trying to get out of town for a long weekend, I needed something quick to eat.
Fresh Hot Food for a Bargain
I should have done this a long time ago. The chicken strips at Ernie’s are big, hot, and fresh and cost less than $6 for three of them. I selected them with a pair of tongs from a stack of them that looked freshly cooked.
The breading was just right, not crispy and not soggy. The meat was tender and hot, without being dry. There is a choice of dipping sauces that come with every order. I chose the basic ranch as I am kind of boring.

I think all Ernie’s needs is a catchy name for a specialty sauce, and they might become a place that just sells chicken. I like how convenience stores have upped their game when it comes to fresh food and Ernie’s Too definitely makes the list.
